Finca Himalaya sits around 1500 meters in the Ataco region of El Salvador. The farm has been in the family since 1875 and the owner Mauricio won three awards in the Cup of Excellence in 2015, one for a coffee from Finca Himalaya. Mauricio has been involved in coffee all his life thanks to his parents and grandparents, who where all devoted specialty growers from western El Salvador. Mauricio now manages five small farms.
The Pacamara cultivar is a cross between the Typica derived Maragogype variety, which produces very large beans, and Pacas, a compact-growing selection of heirloom variety Bourbon.
Brown sugar, plums and walnut flavour comes out under light roast profile. Make a cold brew to brighten the gloomy weather.
