The Carbonic Maceration process, also known as Anaerobic Fermentation
During the Carbonic Maceration process, coffee cherries are first carefully hand-picked and sorted to ensure that only the ripest and highest-quality cherries are used. The cherries are then placed in a sealed container or tank, which is filled with CO2 gas to create an oxygen-free, anaerobic environment.
In this oxygen-free environment, the coffee cherries start to ferment slowly, breaking down their sugars and developing new and unique flavors. The length of the fermentation period can vary depending on the desired flavor profile
Once the fermentation is complete, the coffee beans are carefully washed and dried, usually on raised beds or patios, to remove any remaining pulp and moisture. The resulting coffee beans have a distinct flavor profile
